They are called Blue Muslims (wearing blue caps) by Chinese people because they have similar culture, traditions and customs like other Muslims, White Muslims (wearing white caps). That's why they are not recognized as a separate minority like other muslims in China.

That answers a question I had. I was eating lunch with a friend at a chinese restaurant and we were discussing communism and religious diversity in China and I asked if he knew if there were any chinese jews. He did not know so we asked the waiter "pardon, we were wondering do you have any chinese jews?" and the chinese waiter replied "oh sorry, no we dont have chinese juice we only have apple and grape juice". Lost in inflexion but it was a funny moment.

It's wild to watch this video and listen to them singing this line. These words are sung in some Jewish traditions during the Torah reading section of some prayer services as the physical Torah scroll is lifted up ("hagbah" in Hebrew) to display the writing that has just been read. The words are: "This is the Torah which Moses set before the Children of Israel, according to the word of God, by the hand of Moses."
