The way the video shows him flicking the cards with his thumb is not the technique he's using to stick those cards in the watermelon. He's having to throw them like a baseball with his whole arm. You can watch videos on youtube of people throwing cards and you can see that the velocity it takes to stick a card in a watermelon would make the card go a hell of a lot farther than the distance he was getting from flicking it with his thumb.

I hate to disappoint but a standard trick is to laminate card faces onto thin metal - sometimes razor-blades. It makes the cards fly much better and also cut things if part of the act.
