HDR is High Dynamic Range. Basically it means that the light and dark areas are seen at the same time and same range. Like the human eye can see the light inside a room AND see outside a bright sunny window at the same time without either one contrasting each other.
Here's an example of real HDR photography.

Almost all cameras cannot do that.
