They'd just do what they did for the decisive battles documentary series. Just use modified video games. They used rome total war for their depictions of battles. I can easily see someone modifying the graphics for any video game currently out there to depict a battle. Theres already so many videos comparing ships from television series via combat in games.

I'd rather have a great video that stole models/mechanics from another than a sub par video that didn't.
Same for games. A company can create its own engine, great graphics, but shit gameplay. However a company can use another engine, other models and make a great game.
Battlecruiser Millenium was a game series that everything was done hand up and in theory was great but was marred by horrendous bugs, and god awful gameplay.
