  • !!great old french recipe!! name: "l'éclade" from Charente-Maritime area (south west).
    In France we have an old way to cook shellfish shells, you put them on the floor (usually a tree cut) in round and covered with 10cm of very dry pine needles.
    You let burn the pine needles until the end (all shells must be opened and making noise).
    The taste is absolutely amazing.

  • Kerosene not gas or that guy would have a nicely burnt hand.

    Sometimes I forget to completely burn all the kero out of the charcoal fire and get a faint taste of it, If the chinese didn't want to eat them well.. it's probably because there was still kerosene in them. But the north koreans did :o

  • Arrange mussels on suitable surface, cover with pine needles/hay. Set alight (no petrol required) this produces rapid intense heat to cook the mussels. Called an Eclade in France.

    : "The Charente-Maritime département of France on the Bay of Biscay, is noted for the abundance of mussels.[8] The Éclade des Moules is a bake often held on the beaches outside of La Rochelle. The mussels are arranged in concentric circles on a plank so that the hinged part of the shell is facing up. Pine needles are mounded on top to a depth of a foot or so and set afire. The needles burn down quickly, producing a rich resinous smoke. Two or three minutes after the fire goes out, the ashes are swept away and the mussels are eaten directly from the shell along with country bread, butter, and white wine."
