Was surprised he (correctly) mentioned not to oil the food. I was horrified when I saw a cooking show last weekend telling the audience to oil the food to keep it from sticking to the grill. That's bad advice for cooking over an open flame. Oil the grill - not the food. Let the oil burn off, then lay down the steaks. Perfect grill marks, and no stick. I grilled fish yesterday on my cast iron grill and had to use two tools to keep it from slipping away as I turned it.

OK, I actually want to know . . . I believe wood is better, is that the purist view or do they say gas?
In my opinion wood adds a lot to the flavor of meat.
